Lisa Isakson shares insights on a groundbreaking research project, where Greenfood is investing in systematic work on biodiversity and Science-Based Targets for Nature (SBTN), setting a new standard for the entire industry. Speaking of new standards, in an industry often plagued by high levels of food waste, Greenfood adopted its own zero-waste principle in 2021.
The company aimed to halve its already low food waste levels by 2030, ensuring that all raw materials stay as high up the value chain as possible. Although the target date is still years away, they are already well ahead of schedule. For example, solutions include turning the ends of tomatoes into Pico de gallo for Picadeli salad bars, using apple cores for smoothies, and grating cauliflower and broccoli stalks for salads. The innovation doesn’t stop there – research is also underway to use bacteria to convert vegetable stems into edible flour.
